  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 3 cups old-fashioned oats
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ¾ cup softened butter for filling
  • 3 cups confectioners' sugar
  • vegan marshmallow crème

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter with both sugars until light and fluffy. Add eggs one at a time followed by vanilla.
  3. In another bowl, mix flour, oats, baking soda, and cinnamon. Gradually combine this dry mix into the wet mixture until fully incorporated.
  4. On prepared baking sheets lined with parchment paper, drop spoonfuls of dough and bake for about 10 minutes or until edges are golden.
  5. While cooling, prepare the filling by beating softened butter with confectioners' sugar until smooth; mix in the vegan marshmallow crème.
  6. Once cookies are cool, spread filling on one cookie and sandwich with another.
