- 1 ¾ cup all-purpose flour
- 1 teaspoon baking soda
- ¾ teaspoon kosher salt
- ¾ teaspoon ground cinnamon
- ½ cup butter, room temperature (for filling)
- 2 ½ cups powdered sugar
- 2–3 tablespoons cream or milk
- 1 teaspoon vanilla extract (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line baking trays with parchment paper.
- In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until fluffy. Add eggs one at a time, mixing in the vanilla.
- In another bowl, combine oats, flour, baking soda, salt, and cinnamon.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Chill the dough for at least 30 minutes. Scoop tablespoon-sized portions onto prepared trays and bake for about 10 minutes until edges are golden.
- For the filling, beat butter until smooth; gradually add powdered sugar and cream/milk until fluffy.
- Once cookies are cool, spread filling on one cookie and top it with another.
