  • 3 cups quick oats
  • 1 ¾ cup all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon kosher salt
  • ¾ teaspoon ground cinnamon
  • ½ cup butter, room temperature (for filling)
  • 2 ½ cups powdered sugar
  • 23 tablespoons cream or milk
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking trays with parchment paper.
  2. In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until fluffy. Add eggs one at a time, mixing in the vanilla.
  3. In another bowl, combine oats, flour, baking soda, salt, and cinnamon.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Chill the dough for at least 30 minutes. Scoop tablespoon-sized portions onto prepared trays and bake for about 10 minutes until edges are golden.
  6. For the filling, beat butter until smooth; gradually add powdered sugar and cream/milk until fluffy.
  7. Once cookies are cool, spread filling on one cookie and top it with another.
