Ingredients
- 1 lb shrimp (large, uncooked, tail-off)
- 2 cups uncooked orzo pasta
- 2 cups chicken broth
- 3/4 cup half-and-half
- 5 oz baby spinach
- 1/2 cup grated parmesan cheese
- Juice of 2 tablespoons lemon
- 2 tablespoons butter
- 2 teaspoons extra virgin olive oil
- 6–8 cloves garlic (minced)
- 1 teaspoon cayenne pepper
- 1 teaspoon dried basil
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 1 teaspoon black pepper (divided)
Instructions
- Pat the shrimp dry and season both sides with salt and black pepper.
- In a large skillet over medium-high heat, melt butter and cook the shrimp for 2-3 minutes on each side until pink. Remove from skillet and set aside.
- In the same skillet, add olive oil and minced garlic; cook for about 1 minute until fragrant.
- Stir in uncooked orzo; toast for 1-2 minutes before adding chicken broth and half-and-half.
- Add cayenne pepper, basil, and onion powder; bring to a simmer. Cover and cook for about 10-15 minutes until orzo is al dente.
- Stir in parmesan cheese and spinach until melted and wilted. Add lemon juice just before serving.
- Plate the mixture topped with shrimp, garnished with additional lemon slices and parmesan cheese as desired.
