  • 1 pound rigatoni (or penne)
  • 4 cups chicken broth
  • 2 (14.5 ounce) cans diced tomatoes (undrained)
  • 2 tablespoons cornstarch
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese

Instructions

  1. Heat olive oil in a large deep skillet or Dutch oven over medium heat. Add sliced chicken sausage and cook for about 3-4 minutes until browned.
  2. Add diced onion and red bell pepper to the pan; sauté for another 3-4 minutes until softened.
  3. Stir in minced garlic and Cajun seasoning; cook for about 1 minute.
  4. Pour in chicken broth and add undrained diced tomatoes. Stir in rigatoni, ensuring pasta is submerged.
  5. Bring to a boil, then reduce heat to medium-low, cover, and simmer for approximately 15-18 minutes until pasta is tender.
  6. Whisk cornstarch with half a cup of liquid from the pot until dissolved; return it to the pot and stir well.
  7. Add heavy cream and shredded Parmesan cheese; simmer uncovered for an additional 2-3 minutes until thickened.
