  • 4 ounces turkey strips (diced)
  • 5 cloves garlic (minced)
  • 1 medium onion (diced)
  • 1/4 teaspoon crushed hot red pepper flakes
  • 3 16 ounce cans cannellini beans (drained)
  • 6 cups water (to start but add more as needed)
  • 3 plum tomatoes (hand crushed)
  • 1 sprig rosemary (optional)
  • 2 cups ditalini pasta (or small shells, elbows, etc.)
  • salt and pepper (to taste)

Instructions

  1. Heat olive oil in a heavy pot over medium heat. Sauté turkey strips for 7-10 minutes until cooked through.
  2. Add diced onions and sauté for 5 minutes until softened, then add minced garlic and crushed red pepper flakes, cooking for an additional 2 minutes.
  3. Stir in water, salt, and hand-crushed tomatoes; bring to a boil for 5 minutes.
  4. Add drained cannellini beans and rosemary if using; crush some beans against the pot's side for texture.
  5. Stir in pasta and cook until al dente, adding more water as needed for desired consistency.
  6. Season to taste with salt, pepper, and serve hot.
