- 1 1/2 pounds chicken breasts
- 2 eggs
- 2 tablespoons water
- nonstick cooking spray
- 1 cup flour
- 2 tablespoons cornstarch
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp ground ginger
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 teaspoon coconut oil (may substitute olive oil)
- 3 garlic cloves, minced
- 1–2 teaspoons freshly grated ginger
- 1/3 cup + 1 1/2 tablespoons pineapple preserves
- 1/4 cup pineapple juice
- 1/4 cup reduced sodium soy sauce
- 1/4 cup brown sugar, packed
- 3 tablespoons apple cider vinegar
- 2 teaspoons cornstarch
- 1–2 teaspoons Sriracha/Asian hot red chili sauce
- 1/2 teaspoon salt
Instructions
- Preheat oven to 375°F (190°C) and prepare a baking sheet lined with foil and topped with a cooking rack.
- In a bowl, whisk together the eggs and water. In another bag, combine flour and spices for coating.
- Dip each chicken piece in the egg wash, then coat with the flour mixture.
- Arrange coated chicken on the rack, spray lightly with cooking spray, and bake for about 10 minutes.
- Broil for an additional 5-10 minutes until crispy.
- Meanwhile, prepare the sauce by sautéing garlic and ginger in oil, then adding pineapple preserves, juice, soy sauce, vinegar, sugar, cornstarch, and Sriracha; simmer until thickened.
- Toss baked chicken with the sauce and serve hot.
