  • 2 eggs
  • 2 tablespoons water
  • nonstick cooking spray
  • 1 cup flour
  • 2 tablespoons cornstarch
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp ground ginger
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 teaspoon coconut oil (may substitute olive oil)
  • 3 garlic cloves, minced
  • 12 teaspoons freshly grated ginger
  • 1/3 cup + 1 1/2 tablespoons pineapple preserves
  • 1/4 cup pineapple juice
  • 1/4 cup reduced sodium soy sauce
  • 1/4 cup brown sugar, packed
  • 3 tablespoons apple cider vinegar
  • 2 teaspoons cornstarch
  • 12 teaspoons Sriracha/Asian hot red chili sauce
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking sheet lined with foil and topped with a cooking rack.
  2. In a bowl, whisk together the eggs and water. In another bag, combine flour and spices for coating.
  3. Dip each chicken piece in the egg wash, then coat with the flour mixture.
  4. Arrange coated chicken on the rack, spray lightly with cooking spray, and bake for about 10 minutes.
  5. Broil for an additional 5-10 minutes until crispy.
  6. Meanwhile, prepare the sauce by sautéing garlic and ginger in oil, then adding pineapple preserves, juice, soy sauce, vinegar, sugar, cornstarch, and Sriracha; simmer until thickened.
  7. Toss baked chicken with the sauce and serve hot.
