  • 1 yellow cake mix
  • 2 (3.5 ounce) boxes instant pistachio pudding mix (dry)
  • 4 eggs
  • 1/4 cup vegetable oil
  • 1/8 cup water
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 3 tablespoons milk
  • 1 1/2 cups powdered sugar
  • 1/2 cup chopped shelled pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two loaf pans.
  2. Mix together white sugar and cinnamon in a small bowl.
  3. Coat the greased pans with the cinnamon-sugar mixture.
  4. In a medium bowl, combine cake mix, dry pudding mix, eggs, vegetable oil, water, and sour cream; blend until smooth.
  5. Pour half the batter into each pan and bake for about 45 minutes or until a toothpick comes out clean.
  6. Allow cooling before icing: whisk together milk, vanilla extract, almond extract, and powdered sugar until smooth; pour over cooled loaves and garnish with chopped pistachios.
