  • 1 egg (room temperature)
  • 1 cup white chocolate chips

  • green or blue food color (optional)

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a mixing bowl, whisk together the flour, pistachio pudding mix, baking soda, and salt.
  3. In another bowl, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy (about 3-5 minutes).
  4. Beat in one egg and clear vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Gently fold in white chocolate chips and chopped pistachios. Refrigerate the dough for at least 30 minutes.
