Ingredients

  • 1 tbsp olive oil
  • 400g sausage (chicken, beef, lamb, or turkey)
  • 1 onion (chopped)
  • 2 stalks celery (sliced)
  • 2 carrots (sliced)
  • 2 cloves garlic (minced)
  • 1/2 tsp dried thyme
  • 3 tbsp plain flour
  • 1 litre chicken or vegetable stock
  • 2 bay leaves
  • 100g wild rice
  • 3 medium potatoes (peeled and cut into chunks)
  • 375ml single/light cream
  • Salt to taste

Instructions

  1. In a large soup pot, heat olive oil and cook the sausage until golden brown. Remove from the pot.
  2. In the same pot, sauté onions, celery, and carrots for about 10 minutes. Add garlic and thyme; cook for an additional minute.
  3. Sprinkle flour over the vegetables, mixing well to create a paste. Gradually stir in chicken stock until smooth.
  4. Add bay leaves and wild rice; simmer on low heat for 30 minutes.
  5. Incorporate the cubed potatoes and cook for another 15 minutes until tender.
  6. Stir in the cream and season with salt before serving hot.
