  • 2 1/2 lbs russet potatoes, peeled and cubed
  • 3 cups cooked chicken, cubed
  • 1 medium onion, chopped
  • 8 oz shredded cheddar cheese
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • Salt and pepper to taste
  • Optional: Chopped chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and set aside.
  3. In the same pot, melt the butter over medium heat and sauté the chopped onion until translucent. Stir in flour to create a roux, cooking for about one minute.
  4. Gradually whisk in the milk until smooth, then add salt, pepper, ground mustard, and garlic powder. Cook until thickened.
  5. In a mixing bowl, combine the cooked potatoes, chicken, and half of the shredded cheese. Pour the sauce over the mixture and stir gently.
  6. Transfer to a greased baking dish, top with remaining cheese, and bake for about 30 minutes or until bubbly and golden brown.
  7. Let cool slightly before serving and garnish with chopped chives.
