  • 500g boneless skinless chicken breasts
  • 1 tablespoon of olive oil
  • ½ red bell pepper, finely chopped
  • ½ green bell pepper, finely chopped
  • 1 cup (240ml) 2% milk
  • 100g light cream cheese, cubed
  • 2 cups (480ml) chicken stock
  • 240g uncooked penne pasta
  • 50g parmesan, finely grated
  • fresh finely chopped parsley (optional) to garnish
  • 1 tablespoon of paprika
  • 2 teaspoons of garlic powder
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of oregano
  • 1 teaspoon of onion powder
  • ½ teaspoon of salt
  • ½ teaspoon of thyme
  • ½ teaspoon of cayenne pepper
  • ½ teaspoon of black pepper

Instructions

  1. Combine all spices in a small bowl.
  2. Pat chicken dry and place it in the slow cooker. Drizzle with olive oil and coat with spice mix.
  3. Add chopped bell peppers on top of the chicken and pour in chicken stock.
  4. Cover and cook on high for about 2.5 hours.
  5. Remove the chicken, slice it into pieces, and return to the slow cooker.
  6. Stir in cream cheese until melted, then add milk for smoothness.
  7. Add uncooked penne pasta and cook on high for an additional 30 minutes or until tender.
  8. Stir in grated Parmesan cheese before serving.
