  • 1 lb cooked spaghetti
  • 1 lb shredded chicken (rotisserie recommended)
  • 2 T. unsalted butter
  • 1 lb Velveeta cheese
  • 1 cup milk
  • 1 can (10 oz) Rotel tomatoes
  • 1 can (10 oz) cream of mushroom soup
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat oven to 350°F and grease a 9×13 casserole dish.
  2. In a large stockpot, combine butter, Velveeta, Rotel, cream of mushroom soup, and milk over medium heat until melted and smooth.
  3. Stir in shredded chicken, cooked spaghetti, salt, and pepper until well combined.
  4. Transfer the mixture to the greased casserole dish. Top with shredded cheddar cheese followed by panko breadcrumbs.
  5. Cover with foil and bake for about 30 minutes until hot and bubbly.
  6. Remove foil and broil for an additional 3–5 minutes or until breadcrumbs are golden brown.
