- 2 cans pineapple slices
- 1/2 cup sweet chili sauce
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1/4 cup reserved pineapple juice
- Salt and pepper (to taste)
- Chopped fresh cilantro (for garnish)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with aluminum foil, spraying it lightly with non-stick cooking spray.
- Place the salmon on the prepared foil, season with salt and pepper, and arrange drained pineapple slices around it.
- In a small bowl, whisk together sweet chili sauce, rice vinegar, soy sauce, brown sugar, and reserved pineapple juice; pour over the salmon.
- Bake for 12-15 minutes, then switch to broil for an additional 4-5 minutes until edges are slightly charred.
