Ingredients

  • 22.5 lbs salmon fillet
  • 2 cans pineapple slices
  • 1/2 cup sweet chili sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1/4 cup reserved pineapple juice
  • Salt and pepper (to taste)
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with aluminum foil, spraying it lightly with non-stick cooking spray.
  2. Place the salmon on the prepared foil, season with salt and pepper, and arrange drained pineapple slices around it.
  3. In a small bowl, whisk together sweet chili sauce, rice vinegar, soy sauce, brown sugar, and reserved pineapple juice; pour over the salmon.
  4. Bake for 12-15 minutes, then switch to broil for an additional 4-5 minutes until edges are slightly charred.
  5. Garnish with chopped cilantro before serving.
