  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon fresh lime juice
  • 4 large flour tortillas or spinach wraps
  • 2 cups shredded lettuce
  • 1 cup shredded red cabbage
  • 1 large carrot, julienned
  • 1/2 English cucumber, cut into matchsticks
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon olive oil or avocado oil
  • 1/3 cup mayonnaise or Greek yogurt
  • 2 tablespoons Sweet Chili Sauce
  • 1 tablespoon fresh lime juice

Instructions

  1. In a medium bowl, whisk together the sweet chili sauce, soy sauce, lime juice, minced garlic, and grated ginger. Add sliced chicken and marinate for at least 15 minutes.
  2. While marinating, combine mayonnaise (or yogurt), sweet chili sauce, and lime juice in a small bowl and whisk until smooth.
  3. Heat oil in a skillet over medium-high heat. Add marinated chicken and cook for 5-7 minutes until cooked through.
  4. Pour any reserved marinade into the skillet with cooked chicken and simmer for an additional 1-2 minutes until thickened.
  5. Warm tortillas in the microwave to prevent tearing.
