- 1/2 green bell pepper (cored and seeded)
- 1/2 red bell pepper (cored and seeded)
- 1/2 yellow bell pepper (cored and seeded)
- 1 yellow onion (peeled and halved)
- 1 tablespoon cornstarch
- 1/4 cup plus 2 tablespoons canola oil (divided)
- 2–3 limes
- 12 flour tortillas
Instructions
- Prepare the fajita seasoning by mixing all spices in a small bowl with cornstarch. Combine with oil and lime juice until smooth.
- Slice chicken into thin strips and marinate with two-thirds of the seasoning mix.
- Slice bell peppers and onion; coat with remaining seasoning.
- In a skillet over medium-high heat, cook vegetables until softened. Remove from skillet.
- In the same skillet, cook marinated chicken until browned and cooked through. Return vegetables to skillet to warm through.
