  • 4 medium beets (roasted or steamed)
  • 1 large cucumber (English or Persian)
  • 1 cup feta cheese (crumbled)
  • 1/4 cup fresh dill (or mint/parsley)
  • 2 tablespoons apple cider vinegar or lemon juice
  • 4 tablespoons olive oil
  • Salt and pepper (to taste)
  • 1 teaspoon honey or maple syrup (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Wash the beets, wrap each in foil, and place on a baking sheet. Roast for about 60 minutes until tender. Let cool, then peel and slice.
  2. Slice the cucumber into thin rounds and crumble the feta cheese.
  3. In a mixing bowl, whisk together apple cider vinegar or lemon juice with olive oil, salt, pepper, and honey/maple syrup if desired.
  4. In a large bowl, combine sliced beets, cucumber rounds, crumbled feta, and fresh dill. Drizzle dressing over the salad and gently toss to coat.
  5. Serve immediately or chill for an hour to enhance flavors.
