Ingredients
- 3 tbsp salted butter
- 2 tbsp all-purpose flour
- 3 small carrots (diced)
- 1/2 medium yellow onion (diced)
- 4 garlic cloves (minced)
- 1 1/2 tbsp Italian seasoning
- 6 cups low sodium chicken broth
- 1 lb boneless skinless chicken thighs
- 8–10 lasagna noodles (broken into pieces)
- 1 cup frozen spinach (thawed and drained)
- 1 cup half-and-half
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 4 oz cream cheese
Instructions
- In a heavy-bottomed pot, melt butter with flour over medium heat until golden brown. Add carrots, onions, garlic, Italian seasoning, salt, pepper, and nutmeg; stir well.
- Pour in chicken broth and add chicken thighs. Season with salt and pepper; cover and cook for 20–25 minutes until chicken is tender.
- Remove chicken to shred; return shredded chicken to the pot.
- Bring soup to boil; add broken lasagna noodles and spinach along with half-and-half. Cook for about 8–10 minutes until noodles are tender.
- Lower heat; stir in mozzarella, parmesan, and cream cheese until melted and creamy. Adjust seasoning if needed.
