- 1 16 oz package Deli cole slaw mix with carrot and purple cabbage
- 4 medium green onions (thinly sliced)
- 1/4 cup chopped cilantro (may adjust to taste)
- 3/4 cup vegetable oil
- 1/3 cup rice apple vinegar
- 1/2 cup granulated sugar
- 1 Tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp red pepper flakes
- 1 tsp granulated garlic or garlic powder
- 1 tsp garlic salt and black pepper to taste
- 1 3 oz package ramen noodles (crushed and toasted)
- 1 1/2 cups cocktail peanuts (roughly chopped)
Instructions
- In a large mixing bowl, whisk together vegetable oil, rice apple vinegar, granulated sugar, soy sauce, sesame oil, red pepper flakes, garlic powder, and preferred seasonings.
- Add the cole slaw mix, sliced green onions, and cilantro to the dressing; mix well to combine.
- Cover the mixture and refrigerate for at least 4 hours to allow flavors to meld.
- While chilling, crush the ramen noodles and toast them on a sheet pan at 350°F for 10–12 minutes until golden.
- Just before serving, stir in the toasted ramen noodles and chopped peanuts into the chilled slaw mixture.
