- 4–8 small or large tortillas
- 2 cups shredded cheese (Mexican blend or your choice)
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 2 tablespoons chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chipotle chili pepper
- 1/2 teaspoon Kosher salt
- 2 tablespoons tomato paste
- 2 cups chicken broth
Instructions
- Preheat your oven to 350°F (175°C) and spray a baking dish with non-stick cooking spray.
- Prepare the shredded beef according to your preferred method.
