Instructions

  1. Peel and cube the russet potatoes into ¾-inch pieces. Place in a large saucepan and cover with cold water.
  2. Bring to a boil over high heat, add salt, reduce to a simmer, and cook until fork-tender (8-10 minutes).
  3. Drain the potatoes and return them to the pot. Add vinegar and gently stir; let marinate for 20 minutes.
  4. In a large bowl, combine marinated potatoes with mayonnaise, celery, relish, onions, parsley, mustard, and seasoning.
