Ingredients

  • 1 lb chopped cauliflower
  • 8 slices turkey bacon (chopped)
  • 1 pint grape tomatoes (halved)
  • 2 leeks (sliced)
  • 1/2 cup keto mayonnaise
  • 2 tbsp dill pickle relish
  • 2 tbsp mustard
  • Green onions for garnish

Instructions

  1. Cook chopped cauliflower in salted boiling water for about 7 minutes until tender. Drain and cool.
  2. Roast halved tomatoes drizzled with olive oil at 375°F for 20-30 minutes until soft.
  3. Cook chopped turkey bacon in a skillet until crispy; reserve some fat.
  4. Sauté leeks in reserved fat until translucent and tender; allow to cool.
  5. In a mixing bowl, combine dill pickle relish, mustard, keto mayonnaise, salt, and pepper.
  6. Mix cooled cauliflower, roasted tomatoes, sautéed leeks, turkey bacon, and green onions into the dressing.
