- 1 cup mashed bananas (2–3 bananas)
- 1 egg
- 1 cup almond milk (or milk of your choice)
- 1.5 cups blueberries (fresh or frozen)
- 1/2 cup honey (or maple syrup)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin pan or line it with paper liners.
- In a large bowl, combine mashed bananas, egg, honey, vanilla extract, and almond milk; whisk until smooth.
- Add rolled oats, baking powder, salt, and cinnamon; mix until well combined.
- Gently fold in the blueberries.
- Fill each muffin cup about 3/4 full with the batter.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let cool for 5-10 minutes in the pan before transferring to a wire rack.
