Description

Braised red cabbage is a vibrant and flavorful side dish that beautifully enhances autumn and winter meals. This dish features a delightful combination of sweet apples, tangy balsamic vinegar, and aromatic spices, resulting in a tender sweet-and-sour experience that pairs wonderfully with various main courses.


Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 medium red onion
  • 2 pounds red cabbage (about ½ head)
  • 2 cloves garlic
  • 1½ teaspoons salt
  • 2 twists black pepper
  • 1 large apple
  • ¼ teaspoon cinnamon
  • ½ cup water
  • 1 tablespoon sugar
  • 2 tablespoons balsamic vinegar

Instructions

  1. Halve the cabbage and cut each half into four pieces. Thinly slice the cabbage and finely chop the onion.
  2. In a large pot or Dutch oven, heat olive oil over medium heat. Sauté the sliced onion for about 5 minutes until softened.
  3. Add the sliced cabbage, salt, pepper, and crushed garlic to the pot. Cook on medium-high heat for about 5 minutes while stirring frequently.
  4. Chop the apple (skin on) into small pieces and add it to the pot along with water and cinnamon.
  5. Cover the pot and simmer on low heat for 30 to 60 minutes, stirring occasionally. Adjust water as needed to prevent drying out.
  6. When almost ready, add sugar and balsamic vinegar. Stir well to combine and glaze on medium-high heat for an additional 5 minutes.
