  • 89 pound beef brisket
  • 1/4 cup brown sugar
  • 1 tbsp salt
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp paprika (Hungarian or smoked)
  • 1/2 tbsp pepper
  • 1 tsp dry mustard
  • 1 tsp thyme

Instructions

  1. Trim excess fat from the brisket, leaving some for moisture.
  2. In a bowl, mix brown sugar, salt, onion powder, garlic powder, paprika, pepper, dry mustard, and thyme. Apply half of the rub on one side of the brisket.
  3. Wrap the brisket tightly in foil and refrigerate overnight.
  4. Bring the wrapped brisket to room temperature before baking at 275°F (135°C) for 7-8 hours.
  5. Unwrap and optionally brush with BBQ sauce; cook an additional hour until it reaches an internal temperature of 195-205°F (90-96°C).
  6. Let rest covered with foil for 30-60 minutes before slicing against the grain.
