Ingredients
- 8–9 pound beef brisket
- 1/4 cup brown sugar
- 1 tbsp salt
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp paprika (Hungarian or smoked)
- 1/2 tbsp pepper
- 1 tsp dry mustard
- 1 tsp thyme
Instructions
- Trim excess fat from the brisket, leaving some for moisture.
- In a bowl, mix brown sugar, salt, onion powder, garlic powder, paprika, pepper, dry mustard, and thyme. Apply half of the rub on one side of the brisket.
- Wrap the brisket tightly in foil and refrigerate overnight.
