  • 1 lb. ground beef (lean)
  • 1 cup long grain white rice
  • 6 packed cups cabbage (shredded)
  • 1 1/4 cups tomato sauce
  • 1 1/4 cups low sodium chicken broth
  • 6 cloves garlic
  • 1 onion (any color)
  • 3 Tbsp. olive oil (split)
  • 1 tsp. smoked paprika
  • 1 tsp. Italian seasoning
  • 1 tsp. kosher salt (split)
  • 1 tsp. pepper (split)
  • 1 Tbsp. apple cider vinegar
  • minced fresh herbs such as chives or parsley for garnish (optional)

Instructions

  1. Mince garlic and onion.
  2. Shred cabbage and set aside.
  3. In a large skillet, heat olive oil and sauté garlic and onion until fragrant.
  4. Add ground beef, season with salt and pepper, then cook until browned.
  5. Stir in smoked paprika and Italian seasoning.
  6. In a separate skillet, sauté rice in olive oil for 1-2 minutes.
  7. Add chicken broth and tomato sauce to the rice; bring to a boil then simmer covered until cooked.
  8. Combine cooked rice with beef mixture and add shredded cabbage; stir until well combined.
  9. Adjust consistency with more broth if desired; serve warm garnished with fresh herbs.
