  • 1 lb lean ground beef
  • Salt and pepper to taste
  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • 4 cups green cabbage (chopped)
  • 2 medium carrots (sliced)
  • 4 cups low-sodium beef broth
  • 3 cans (8 oz each) tomato sauce
  • 1/2 cup uncooked white rice
  • 1 bay leaf
  • 3 tbsp light brown sugar
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. In a large pot, heat vegetable oil over medium-high heat. Add ground beef, seasoning with salt and pepper. Cook until browned.
  2. Stir in diced onion and minced garlic; sauté for 2-3 minutes until onions are tender.
  3. Add chopped cabbage, carrots, tomato sauce, beef broth, uncooked rice, bay leaf, and brown sugar. Mix well.
  4. Bring to a simmer and cook for about 25 minutes until the rice is tender.
  5. Remove the bay leaf and sprinkle fresh parsley on top before serving.
