  • 3 lbs flank steak (or flap steak)
  • 3 limes (juiced)
  • 1 orange (juiced)
  • 1 tbsp ground cumin
  • 1 tsp ground oregano
  • 1 tbsp ground paprika
  • 4 garlic cloves (finely minced)
  • 1/2 onion (sliced)
  • 1/2 cup oil
  • 1 tbsp salt
  • 1 tsp ground pepper
  • 12 corn tortillas
  • cilantro (chopped)
  • onion (diced)
  • lime (halved)
  • favorite salsa

Instructions

  1. In a large plastic sealable bag, combine all marinade ingredients including lime juice, orange juice, garlic, cumin, oregano, paprika, oil, salt, and pepper.
  2. Zip up the bag ensuring it's sealed tightly.
  3. Add the flank steak into the bag and mix thoroughly by massaging the outside of the bag.
  4. Place the sealed bag in the refrigerator.
  5. Allow it to marinate for at least one hour or overnight for deeper flavor.
  6. Preheat your grill to 450 degrees F.
  7. Remove the steak from the marinade and discard any leftover marinade.
  8. Grill flank steak for 5-6 minutes per side until it reaches an internal temperature of 130°F for medium rare or adjust time for desired wellness.
  9. Once cooked to your liking, remove from grill and let rest for about 5 minutes.
  10. Slice against the grain into thin strips or dice into bite-sized pieces.
  11. While resting beef, warm corn tortillas on the grill for about 30 seconds on each side until soft.
  12. Place chopped meat onto each tortilla.
  13. Top generously with chopped cilantro, diced onion, and your favorite salsa.
  14. Serve with lime wedges on the side for extra zest!
