  • 1 1/2 pounds red skin potatoes, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 3 tablespoons ranch seasoning mix
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon fresh cracked pepper
  • 1 cup sharp cheddar cheese, shredded

Instructions

  1. Preheat your grill to medium heat and lightly spray four rectangles of heavy-duty aluminum foil with cooking spray.
  2. In a large bowl, combine the potato pieces with olive oil, ranch seasoning, salt, and pepper. Toss until evenly coated.
  3. Divide the seasoned potatoes among the center of each foil rectangle and fold the foil securely to seal.
  4. Place the foil packs on the grill seam side down and cook for 10 minutes. Flip them over and continue grilling for another 10 minutes.
  5. Carefully open each pack and sprinkle cheese on top of the potatoes. Close the packs and return them to the grill for an additional 3-4 minutes until the cheese is melted.
