  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • 3 cloves garlic (minced)
  • Juice from 1 lime
  • 2 tablespoons oil (canola or olive oil)
  • 3 bell peppers (sliced)
  • 1 large onion (sliced)
  • Warm tortillas for serving

Instructions

  1. Marinate your protein by mixing oil, spices, garlic, lime juice, salt, and pepper in a resealable bag. Add your protein and marinate in the fridge for 30 minutes to 3 hours.
  2. Prepare vegetables by adding sliced bell peppers and onions to another resealable bag with oil and seasoning.
  3. Preheat the grill or heavy skillet over medium-high heat. Cook the marinated protein until done: chicken should reach an internal temperature of 165°F; steak should be medium rare; shrimp should turn pink.
  4. Grill seasoned vegetables until charred but tender.
  5. Assemble fajitas by serving grilled protein in warm tortillas topped with grilled veggies and your choice of salsa or guacamole.
