  • 4 lbs crisp sweet apples (Gala, Jazz, or Golden Delicious)
  • 1 (8 oz) pkg Neufchatel cheese
  • 1/2 cup packed light brown sugar
  • 2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 (8 oz) pkg light sour cream
  • 2 Tbsp fresh lemon juice
  • 1 cup chopped walnuts
  • 3/4 cup dried cranberries

Instructions

  1. In a mixing bowl, whip together Neufchatel cheese, brown sugar, cinnamon, and nutmeg until light and fluffy. Add sour cream and blend well.
  2. Combine cold water and lemon juice in another bowl. Dice apples into cubes and soak in the lemon water to prevent browning.
  3. Drain the apples and transfer them to a large bowl. Add walnuts and cranberries.
  4. Gently fold in the chilled dressing until evenly coated. Garnish with remaining walnuts and cranberries before serving.
