  • 34 pounds boneless beef shoulder roast (or beef loin)
  • 2 teaspoons kosher salt
  • 2 teaspoons smoked paprika
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon black pepper
  • ½ teaspoon cayenne pepper (to taste)
  • 2 tablespoons brown sugar
  • 1 large yellow onion (diced)
  • 1 cup apple juice
  • Optional: 1-2 cups barbecue sauce

Instructions

  1. In a bowl, combine salt, paprika, onion powder, garlic powder, black pepper, cayenne pepper, and brown sugar to create the spice mixture.
  2. Pat the beef dry and rub the spice mixture generously over all sides.
  3. Layer diced onions at the bottom of the slow cooker and pour in apple juice. Place the seasoned beef on top.
  4. Cover and cook on low for 8-10 hours until the internal temperature reaches about 200°F (93°C) and the meat is fork-tender.
  5. Let the beef rest for 15–20 minutes before shredding with forks or a mixer.
