  • 0.63 lb ground chicken (or turkey, or beef)
  • 3 scallions (finely chopped)
  • 0.3 oz ginger (finely chopped)
  • 1 tsp toasted sesame oil
  • ¼ tsp coarse sea salt (plus more for sprinkling)
  • â…› tsp ground white pepper
  • 2 tsp tapioca starch
  • Avocado oil (for frying)
  • 1 tbsp light soy sauce (or 1½–2 tbsp coconut aminos, omit sugar)
  • ½ tsp sugar
  • ¼ tsp toasted sesame oil
  • 1–1½ tsp rice vinegar (or Chinese black vinegar)

Instructions

  1. Peel and slice the daikon into thin rounds, flatten slightly if desired.
  2. In a mixing bowl, combine ground chicken, scallions, ginger, sesame oil, salt, white pepper, and starch.
  3. Place a tablespoon of filling onto each daikon slice, fold over to create a half-moon shape, and seal the edges.
  4. Heat avocado oil in a non-stick skillet over medium heat; fry potstickers until golden brown on one side.
  5. Add water to steam the potstickers for about 5 minutes; serve warm with dipping sauce.
