  • 2 racks of beef ribs (St. Louis or Baby Back)
  • 1/4 cup soy sauce
  • 3 tbsp lime juice
  • 1 tbsp garlic powder
  • 2 tbsp adobo seasoning
  • 1/2 tsp ground oregano
  • 1 tsp Bijol condiment (optional)
  • 1/2 cup BBQ sauce (for brushing)

Instructions

  1. 1. Prep the ribs: Remove the membrane from the back and trim excess fat.
  2. 2. Cut and season: Slice the ribs into single pieces, place in a bowl, and mix with soy sauce, lime juice, garlic powder, adobo, oregano, and Bijol. Refrigerate for at least 4 hours or overnight.
  3. 3. Bake at high temperature: Preheat oven to 500°F. Lay seasoned ribs on a baking sheet bone side down and bake uncovered for 20 minutes.
  4. 4. Slow cook with foil: Cover with aluminum foil, reduce temperature to 325°F, and cook for an additional hour and 20 minutes.
  5. 5. Finish with crispiness: Remove foil, increase temperature to 425°F, and bake uncovered for another 20 minutes until browned.
  6. 6. Brush with BBQ sauce: After baking, brush desired amount of BBQ sauce over the ribs.
  7. 7. Optional broil: Broil on high for about 3 minutes for extra crispiness.
