  • 1 lb lean ground beef
  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • 2 medium carrots (sliced)
  • 1 red bell pepper (diced)
  • 1 small green cabbage (chopped)
  • 4 cups low-sodium beef broth
  • 3 cans crushed tomatoes
  • 1/2 cup brown rice or quinoa
  • Fresh thyme leaves
  • 1 bay leaf
  • 1 tbsp honey

Instructions

  1. Heat oil in a large Dutch oven over medium heat.
  2. Add ground beef and cook until browned.
  3. Stir in onion, garlic, carrots, red bell pepper, and thyme; cook until softened.
  4. Deglaze the pot with 1/2 cup of broth.
  5. Add cabbage, crushed tomatoes, brown rice (or quinoa), bay leaf, and honey; stir well.
  6. Bring to a boil, then reduce heat and simmer for 35-40 minutes until rice is cooked and cabbage is tender.
  7. Remove bay leaf before serving hot.
