Ingredients
- 1 lb lean ground beef
- 1 medium yellow onion (diced)
- 2 cloves garlic (minced)
- 2 medium carrots (sliced)
- 1 red bell pepper (diced)
- 1 small green cabbage (chopped)
- 4 cups low-sodium beef broth
- 3 cans crushed tomatoes
- 1/2 cup brown rice or quinoa
- Fresh thyme leaves
- 1 bay leaf
- 1 tbsp honey
Instructions
- Heat oil in a large Dutch oven over medium heat.
- Add ground beef and cook until browned.
- Stir in onion, garlic, carrots, red bell pepper, and thyme; cook until softened.
- Deglaze the pot with 1/2 cup of broth.
- Add cabbage, crushed tomatoes, brown rice (or quinoa), bay leaf, and honey; stir well.
- Bring to a boil, then reduce heat and simmer for 35-40 minutes until rice is cooked and cabbage is tender.
- Remove bay leaf before serving hot.
