  • 1 cup sugar
  • 1 cup yogurt
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • 4 lbs pitted cherries
  • Optional: sesame seeds and powdered sugar for topping

Instructions

  1. Preheat your oven to 420°F (215°C) and grease a 9×15 inch baking pan with vegetable oil.
  2. In a mixing bowl, whisk together the eggs and sugar until combined. Add yogurt, vegetable oil, and vanilla; mix until smooth.
  3. Stir in flour and baking powder until just combined.
  4. Spread half of the batter into the prepared pan. Layer pitted cherries on top and sprinkle with granulated sugar. Pour remaining batter over cherries and smooth out.
  5. If desired, sprinkle sesame seeds on top before baking.
  6. Bake for 25-35 minutes or until a toothpick inserted comes out clean.
  7. Allow cooling completely in the pan before cutting into squares.
