Ingredients

  • 1/3 Cup Olive Oil
  • 1/4 Cup Soy Sauce (low sodium)
  • 1/4 Cup Lime Juice
  • 2 Tablespoons Apple Cider Vinegar
  • 2 Tablespoons White Sugar
  • 1/4 teaspoon Kosher Salt
  • 1/2 teaspoon Freshly Ground Black Pepper
  • 1 teaspoon Ground Cumin
  • 1 Tablespoon Garlic Cloves (minced)
  • 1 Jalapeño Pepper (seeded and minced fine)
  • 1/2 Cup Fresh Cilantro Leaves
  • 1 Flank Steak
  • 1 Jalapeno (minced, seeded if you want less spicy)
  • 2 Tablespoons Olive Oil
  • 1 Large Avocado (peeled and chopped)
  • 1 Large Mango (peeled and chopped)
  • 1/3 Cup Red Onion (minced)
  • 1 Cup Tomatoes (chopped; small heirloom recommended)
  • 3 Tablespoons Fresh Lime Juice
  • 1/4 Cup Finely Chopped Cilantro
  • Salt to Taste
  • Shredded Cheese
  • Cilantro Lime Quinoa
  • Grilled Corn
  • Extra Lime Wedges

Instructions

  1. Prepare the marinade by whisking together all of the marinade ingredients in a mixing bowl.
  2. Place the flank steak in a ziplock bag and pour in the marinade.
  3. Seal the bag tightly and refrigerate for 12–24 hours. Flip halfway through to ensure even marination.
  4. Remove the steak from the refrigerator about 30 minutes before grilling to bring it closer to room temperature.
  5. Preheat your grill to medium-high heat.
  6. Once preheated, reduce heat to medium before placing the steak on the grill.
  7. Grill each side for about 5–7 minutes or until cooked to your desired doneness.
  8. While grilling, prepare your grilled corn as per your preferred method.
  9. Cook quinoa according to instructions provided in Cilantro Lime Quinoa.
  10. Shred cheese and slice lime wedges.
  11. In a mixing bowl, whisk together jalapeno, olive oil, lime juice, and cilantro.
  12. Add chopped avocado, mango, red onion, tomatoes, and season with salt to taste.
  13. Start with quinoa at the bottom of each bowl.
  14. Top with sliced grilled steak, grilled corn, avocado salsa, shredded cheese, and extra lime wedges on the side.
