- 2 tablespoons butter
- 1–1¼ lb sirloin steak, cut into one-inch cubes
- Salt and pepper to taste
- 1 lb baby red and yellow potatoes, cut into ½ inch cubes
- 3 large garlic cloves, minced
- 1 teaspoon fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- ¼ –½ teaspoon red pepper flakes (to taste)
Instructions
- Heat a large skillet over medium heat. Melt one tablespoon of butter with ½ tablespoon of olive oil in the skillet.
- Add cubed potatoes along with minced garlic, chopped herbs, and red pepper flakes. Cook for about 5-6 minutes until tender but firm; season with salt and pepper. Remove from skillet.
- Increase heat to high; add remaining olive oil and butter. Add steak bites in a single layer and sear for about one minute without moving.
- Cook until all sides are browned (about 4-6 minutes). Season with salt and pepper, then return potatoes to the skillet for an additional minute before serving.
