  • 1 lb ground beef
  • 2 garlic cloves, minced
  • 2 tsp chili powder
  • 1½ tsp dried oregano
  • 1½ tsp cumin
  • 2 Tbsp chipotle sauce (adobo)
  • Corn tortillas
  • 1½ cups pineapple chunks, diced
  • â…“ cup red onion, diced
  • 1 jalapeño, deseeded & finely chopped
  • ¼ cup cilantro, chopped
  • ½1 lime, juiced

Instructions

  1. Prepare the pineapple salsa by mixing diced pineapple, red onion, jalapeño, cilantro, and lime juice in a bowl. Set aside.
  2. In a skillet over medium heat, cook the ground beef until browned. Add minced garlic and cook for another minute.
  3. Stir in chili powder, oregano, cumin, salt, chipotle sauce, lime juice, and vinegar. Cook for 5-7 minutes until well combined.
  4. Warm corn tortillas in another skillet or microwave.
  5. Assemble tacos by placing seasoned ground beef on each tortilla and topping with pineapple salsa.
