- 2 garlic cloves, minced
- 2 tsp chili powder
- 1½ tsp dried oregano
- 1½ tsp cumin
- 2 Tbsp chipotle sauce (adobo)
- Corn tortillas
- 1½ cups pineapple chunks, diced
- â…“ cup red onion, diced
- 1 jalapeño, deseeded & finely chopped
- ¼ cup cilantro, chopped
- ½–1 lime, juiced
Instructions
- Prepare the pineapple salsa by mixing diced pineapple, red onion, jalapeño, cilantro, and lime juice in a bowl. Set aside.
- In a skillet over medium heat, cook the ground beef until browned. Add minced garlic and cook for another minute.
- Stir in chili powder, oregano, cumin, salt, chipotle sauce, lime juice, and vinegar. Cook for 5-7 minutes until well combined.
- Warm corn tortillas in another skillet or microwave.
- Assemble tacos by placing seasoned ground beef on each tortilla and topping with pineapple salsa.
