- 1 lb large shrimp, peeled and deveined
- 1 fresh pineapple, cut into chunks
- 1 red bell pepper, diced
- 1 red onion, diced
- ¼ cup honey
- 2 tbsp soy sauce
- 1 tbsp sriracha sauce
- 1 tbsp fresh lime juice
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tbsp olive oil
- Salt & pepper to taste
Instructions
- If using wooden skewers, soak them in water for 30 minutes.
- Thread shrimp, pineapple chunks, red bell pepper, and red onion onto the skewers.
- In a bowl, whisk together honey, soy sauce, sriracha sauce, lime juice, garlic, and ginger.
- Preheat the grill to medium-high heat.
- Brush skewers lightly with olive oil and season with salt and pepper.
- Grill skewers for about 2-3 minutes per side until shrimp are pink and opaque and vegetables are slightly charred.
- Brush generously with remaining glaze during the last minute of grilling.
