Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 fresh pineapple, cut into chunks
  • 1 red bell pepper, diced
  • 1 red onion, diced
  • ¼ cup honey
  • 2 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • 1 tbsp fresh lime juice
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. If using wooden skewers, soak them in water for 30 minutes.
  2. Thread shrimp, pineapple chunks, red bell pepper, and red onion onto the skewers.
  3. In a bowl, whisk together honey, soy sauce, sriracha sauce, lime juice, garlic, and ginger.
  4. Preheat the grill to medium-high heat.
  5. Brush skewers lightly with olive oil and season with salt and pepper.
  6. Grill skewers for about 2-3 minutes per side until shrimp are pink and opaque and vegetables are slightly charred.
  7. Brush generously with remaining glaze during the last minute of grilling.
