  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 3 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 1/2 tsp crushed red pepper flakes (optional for heat)
  • 1 tbsp cornstarch + 2 tbsp water (optional for thickening)
  • 2 green onions (sliced)
  • Sesame seeds
  • Pineapple slices or chunks (grilled or fresh)

Instructions

  1. In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, honey, rice vinegar, sesame oil, garlic, ginger, and optional red pepper flakes.
  2. Place chicken thighs in a resealable bag or shallow dish; pour half of the marinade over the chicken and seal. Marinate in the refrigerator for at least 2 hours or overnight.
  3. Preheat your grill or skillet to medium-high heat. Cook chicken for 5–7 minutes per side until fully cooked (internal temperature should reach 165°F).
  4. In a saucepan, bring reserved marinade to a boil; reduce heat and add cornstarch slurry if desired for thickness. Simmer until glossy.
  5. Serve sliced chicken drizzled with teriyaki sauce and garnish with green onions and sesame seeds.
