Ingredients
- 3 large carrots, cut into thirds
- 6 stalks celery, cut into thirds
- 1 unpeeled sweet potato, cut into large pieces
- 1/2 bunch kale, roughly chopped
- 1/2 bunch parsley
- 2 four-inch pieces of kombu
- 4 whole cloves of garlic, peeled
- 2 bay leaves
- 1-inch piece of fresh ginger, peeled and sliced into rounds
- 1 tsp sea salt
Instructions
- Rinse all vegetables thoroughly. Place them in a large stock pot with the remaining ingredients.
- Add 5-6 quarts of water to the pot. Cover and bring to a boil.
- Once boiling, reduce heat and simmer partially covered for 2-3 hours. Stir occasionally and add more water if needed.
- Allow the broth to cool slightly before straining through a sieve. Store in glass jars in the fridge for up to 5 days or freeze for later use.
