Ingredients

Scale
  • 3 large carrots, cut into thirds
  • 6 stalks celery, cut into thirds
  • 1 unpeeled sweet potato, cut into large pieces
  • 1/2 bunch kale, roughly chopped
  • 1/2 bunch parsley
  • 2 four-inch pieces of kombu
  • 4 whole cloves of garlic, peeled
  • 2 bay leaves
  • 1-inch piece of fresh ginger, peeled and sliced into rounds
  • 1 tsp sea salt

Instructions

  1. Rinse all vegetables thoroughly. Place them in a large stock pot with the remaining ingredients.
  2. Add 5-6 quarts of water to the pot. Cover and bring to a boil.
  3. Once boiling, reduce heat and simmer partially covered for 2-3 hours. Stir occasionally and add more water if needed.
  4. Allow the broth to cool slightly before straining through a sieve. Store in glass jars in the fridge for up to 5 days or freeze for later use.
