  • 1 cup instant oats
  • ¾ cup whole wheat flour (or gluten-free flour)
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp coconut oil or unsalted butter, melted and cooled slightly
  • 1 large egg, room temperature
  • 1 tsp almond extract
  • ¼ cup pure maple syrup, room temperature
  • 6 tbsp unsweetened vanilla almond milk, room temperature
  • ½ cup diced peaches

Instructions

  1. In a medium bowl, mix together oats, flour, cinnamon, baking powder, nutmeg, and salt.
  2. In another bowl, whisk melted coconut oil or butter with the egg and almond extract. Add maple syrup and almond milk; stir until smooth.
  3. Gradually add the dry ingredients to the wet mixture until just combined. Gently fold in the diced peaches.
  4. Chill the dough for at least 30 minutes.
  5. Preheat your oven to 325°F (165°C) and prepare a baking sheet with parchment paper.
  6. Scoop rounded tablespoons of dough onto the baking sheet and flatten slightly.
  7. Bake for 9-12 minutes until lightly golden. Allow cooling for 10 minutes before transferring to a wire rack.
