Ingredients
- 2 large yellow onions
- 12 cloves garlic
- 4 tablespoons dried Italian seasoning
- 1 – 2 teaspoons crushed red pepper
- 1 1/2 tablespoons granulated sugar
- 2 teaspoons salt (more to taste)
- 1 1/2 teaspoons ground black pepper (more to taste)
- 1/3 cup extra virgin olive oil
- Four 28-oz cans crushed tomatoes or whole peeled San Marzano tomatoes
- 1 cup dry apple vinegar
- 1 tablespoon Worcestershire sauce
- 1/2 cup chopped fresh parsley
- 3/4 cup chopped fresh basil
Instructions
- In a food processor, blend onions, garlic, Italian seasoning, crushed red pepper, sugar, salt, and black pepper until smooth.
- Heat olive oil in a heavy saucepan over medium heat; sauté the onion-garlic paste for about 5 minutes.
- Add one can of crushed tomatoes; cook until thickened (5–10 minutes).
- Stir in apple vinegar and remaining tomatoes; bring to a boil.
- Reduce heat and simmer partially covered for 1–2 hours, adjusting seasoning as needed.
- Stir in fresh parsley and basil before serving.
