  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water
  • 2 cups cooked white rice
  • 1 avocado, diced
  • 1 cucumber, sliced
  • 1 cup cooked edamame
  • ½ cup sriracha mayo
  • Red pepper flakes, to taste
  • Sesame seeds, for garnish

Instructions

  1. Cut salmon fillets into 1-inch cubes.
  2. In a mixing bowl, combine soy sauce, honey, sriracha, minced garlic, and water to create the marinade.
  3. Marinate the salmon cubes for at least 20 minutes in the refrigerator.
  4. Heat a non-stick skillet over medium-high heat and cook the marinated salmon cubes for 2-3 minutes per side until crispy.
  5. Pour reserved marinade into the skillet to thicken briefly.
  6. Assemble bowls with rice as the base, topped with salmon, avocado, cucumber, and edamame.
  7. Drizzle with sriracha mayo and add red pepper flakes and sesame seeds as desired.
