Ingredients

Scale
  • 2 ribeye steaks (about 1 inch thick)
  • 2 tablespoons olive oil
  • 4 garlic cloves (2 smashed, 2 minced)
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter (divided)
  • Fresh rosemary or thyme sprigs
  • Salt and black pepper to taste

Instructions

  1. Pat the ribeye steaks dry, seasoning generously with salt and pepper on both sides.
  2. Heat olive oil in a cast iron skillet over medium-high heat. Sear the steaks for 3-4 minutes per side for medium-rare, adjusting as necessary.
  3. Add 2 tablespoons butter, smashed garlic, and herbs to the skillet; spoon the melted butter over steaks while they cook.
  4. Once cooked to your liking, remove steaks from the skillet and let rest for 5-7 minutes.
  5. In the same skillet, reduce heat to medium, melt remaining butter, then sauté minced garlic until fragrant.
  6. Stir in heavy cream; bring to a simmer before adding Parmesan cheese, mustard, salt, and pepper. Cook until smooth and slightly thickened.
  7. Slice steaks against the grain and serve topped with creamy garlic sauce.
