  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 3 cups whole milk
  • 3 lbs potatoes (Yukon or russet), thinly sliced
  • 8 oz cheese (sharp cheddar or Gruyere)
  • Salt and pepper to taste

Instructions

  2. In a skillet, heat olive oil over medium heat and caramelize the onions until golden brown; set aside.
  3. In the same skillet, make a roux by melting butter, adding flour, and whisking for about 2 minutes.

  5. Layer half the potatoes in the baking dish, pour half of the sauce over them, add half of the cheese, then repeat layers.
