  • 1 1/2 cups graham crackers
  • 6 tablespoons unsalted butter (melted)
  • 4 large egg yolks
  • 14-ounce can sweetened condensed milk
  • 1/2 cup fresh lime juice
  • 1 tablespoon agave syrup

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.
  2. In a food processor, crush graham crackers into fine crumbs. Combine with melted butter, sugar, and salt, then press evenly into the bottom of the prepared pan. Bake for about 10 minutes.
  3. In a mixing bowl, whisk together egg yolks, sweetened condensed milk, lime juice, agave syrup, and optional lime zest until smooth. Pour over the baked crust.
  4. Bake for another 15 minutes until filling is set. Allow to cool completely before slicing into squares.
