Ingredients
- 4 cobs sweet corn (peeled)
- 3 tbsps butter (melted)
- ¾ tsp tajin spice
- 3 tbsps mayo
- 3 tbsps Mexican style cream
- ½ tsp salt
- ½ tsp paprika
- ½ whole lime (juiced)
- ¼ cup cotija cheese (grated)
- 2 tbsps chopped cilantro
Instructions
- Preheat the grill to medium heat.
- In a mixing bowl, combine mayo, Mexican style cream, tajin spice, salt, paprika, and lime juice. Mix until smooth and set aside.
- Brush each corn cob with melted butter and wrap tightly in aluminum foil.
- Grill wrapped cobs for about 15–18 minutes, turning every few minutes until blistered.
- Carefully unwrap the corn and brush generously with the sauce mixture.
- Top each ear of corn with grated cotija cheese and chopped cilantro before serving.
