  • 2 lb beef roast (shoulder or butt)
  • 1 tsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1/2 tsp paprika
  • 1 tbsp brown sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp oil
  • 1/4 cup water
  • 1 cup BBQ sauce

Instructions

  1. In a small bowl, mix apple cider vinegar, mustard, paprika, brown sugar, salt, and pepper. Place the beef in a large bag; pour the marinade over it and coat thoroughly. Refrigerate for at least 2 hours or overnight.
  2. Preheat your oven to 300°F (150°C).
  3. Bring beef to room temperature for about 20 minutes. Heat oil in a Dutch oven over high heat; sear the beef until browned on all sides.
  4. Transfer the seared beef back to the Dutch oven and add water around it. Cover with a lid or foil and cook in the oven for approximately three hours until fork-tender.
  5. Shred the beef using two forks and mix in BBQ sauce until well combined.
  6. Serve warm on buns or as desired.
