Description

This Pasta Salad is a vibrant and refreshing dish that brings together an array of colorful vegetables and a zesty Italian dressing, making it perfect for any occasion—be it a summer barbecue, family dinner, or a quick lunch.


Ingredients

  • 16 ounces rotini pasta
  • 1 medium cucumber (chopped)
  • 1 pint grape tomatoes (halved)
  • 1 small bell pepper (chopped)
  • ¼ cup finely diced red onion
  • 1 cup Italian dressing
  • â…” cup crumbled feta cheese
  • ¼ cup sliced black olives
  • 3 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package directions until al dente. Drain and rinse under cold water until cool.
  2. Chop the cucumber, grape tomatoes, bell pepper, and red onion into bite-sized pieces.
  3. In a large mixing bowl, combine the cooled pasta with the chopped vegetables.
  4. Pour in the Italian dressing and sprinkle feta cheese, olives, and parsley on top. Season with salt and black pepper to taste; toss until well mixed.
  5. Serve immediately or chill in the refrigerator for about an hour to enhance flavors.
